Barbeque Cooking Hygiene Tips

Always wash hands thoroughly with soap and hot water prior to handling food and after handling raw meat, poultry fish or seafood.

Always thoroughly wash any containers, plates & utensils that have been used for raw meat, poultry, fish or sea-food.

Never re-use the same containers, plates & utensils that have been used for handling raw meat, poultry, fish or seafood unless you first wash them thoroughly with detergent and hot water.

Never use marinades from raw meat, poultry or fish on foods that are ready to be served.

If you pre-cook meat or poultry, do so immediately before cooking on your barbeque.

Always allow frozen meat, poultry, fish, seafood etc. to defrost overnight in the fridge. Never defrost them at room temperature or on an open worktop.

Cover, cool & refrigerate leftovers within 2 hours of cooking.

Safe Cooking Temperatures for Barbeque Meats

Use a quality probe thermometer to ensure meats have reached a safe internal temperature before you serve them. We recommend these temperatures as a minimum:-

65°C (150°F) Unprocessed Beef, Lamb, Fish

75°C (170°F) Pork & Processed Meat Products such as Burgers, Sausages etc.

85°C (185°F) Poultry & all Processed Foods containing Chicken & Poultry

Barbeque Care & Maintenance

Protect your Barbecue from the elements, bird droppings, rust etc. After barbecuing, allow your barbeque to cool; then clean & treat your barbeque as below; finally, cover it with a quality Barbeque Cover.

Wash cooking grills, heat shields and utensils with hot water & washing up liquid, rinse well and dry. Lightly coat the grill & any un-coated surfaces with vegetable oil. A Pump spray is great for this.

If rust appears on the exterior surface of your grill, remove with steel wool or fine abrasive paper. Touch-up with a good quality high-temperature paint.

Never apply paint of any kind to the interior surfaces of your barbecue. Rust spots on the interior surface can be cleaned off & prepared as above; then lightly coated with vegetable oil or vegetable oil spray to provide a non-hazardous protective coating.
